Fresh and dried Scottish seaweed, cut to order. If you cook, brew, make or research with seaweed, we can supply it: fresh from a low tide and chilled the same day, or dried in small bespoke batches.

It is for restaurant kitchens and chefs, food and drink producers, skincare and product makers, and researchers who need clean, identified Scottish seaweed with a name and a shore attached. Every order is cut by hand, above the growing point, on a rotation that leaves the beds to recover: the same cut, never pull rule we teach on the shore.

What we supply

Fresh

Cut on the tide and chilled straight away, in 5 kg lots. Minimums depend on the species and the season. Dispatched the same or next day.

Dried

Small bespoke quantities: whole leaf, pieces or flakes, dried low and slow to keep colour and flavour. From a few hundred grams. Keeps for a year.

One species or a mixed order, one-off or a standing supply through the season. Seasons vary, so tell us your dates and we will tell you what will be at its best.

How it works

  1. Tell us what you need. Species, fresh or dried, quantity, when you need it and where it is going. The form below covers it.
  2. We check the season and the tides and come back within a day with what is possible, a price per kilo and a harvest date.
  3. Cut to order on the low tide. Rinsed in clean seawater, sorted, and chilled or laid out to dry within hours.
  4. Delivered. Drop-off by hand across the East Neuk and Fife. Chilled courier across the UK for fresh. International shipping for dried, and for fresh by arrangement.

Provenance and standards

The shores we work are the clean-water beaches between Elie and Kingsbarns, away from outfalls and harbours. Commercial harvesting in Scotland needs the foreshore owner’s consent, and we harvest with the permissions the law requires; our plain guide to the law explains how that works. Every bag carries the species, the shore and the date it was cut.

Fresh seaweed is a living ingredient: keep it chilled and use it within a few days, or dry it. If you would like to see the shore and the harvest for yourself, a chefs’ day on the rocks is the best introduction there is. For a first order, ask for a sample pack.

Questions

What is the minimum order?

Fresh seaweed is cut in 5 kg lots; the practical minimum depends on the species and what the shore is giving. Dried seaweed is prepared in small bespoke quantities, so a few hundred grams is fine to start.

How quickly can you supply fresh seaweed?

Fresh seaweed is cut on a low tide and dispatched the same or next day, chilled. Tides set the calendar, so tell us when you need it and we will match the nearest window. Dried seaweed can go out any day it is in stock.

Can you ship outside the UK?

Yes. Dried seaweed travels well anywhere; fresh seaweed ships chilled within the UK and to nearby markets by arrangement. Across Fife and the East Neuk we drop off by hand.

Which seaweeds can you supply?

Every edible species we work with except laver: dulse, pepper dulse, dabberlocks, sea spaghetti, sugar kelp, oarweed, sea lettuce and gutweed, carrageen and the wracks. Availability follows the season.

Can we try a sample first?

Yes. Tell us what you are working on and we will put together a small sample pack of what is in season.
