Some of the best days on the shore are the ones built to order. Jayson runs private sessions for professional kitchens wanting to bring seaweed onto the menu, for teams who'd rather forage together than sit in a meeting room, for schools and community groups, and for festivals across Scotland.

Visiting chefs from France have cooked on the beach at Kingsbarns; local restaurants take his harvest; foraging festivals book him season after season. Whatever the group, the shape is yours: a full forage-and-fire day, a demo, a talk, a menu-development session, or something in between.

Every workshop runs to our A.L.L.W.E.T. framework: an Ally on dry land, the right Location, Lunch and moderation, Weather checked, proper Equipment (helmets and grippy footwear provided), and the Tides read before we step out. Please follow your guide's instructions at all times and tell us about allergies or dietary needs when you book.
