Who we are. East Neuk Seaweed is a small, owner-led food and foraging business in the East Neuk of Fife. Since 2019 founder Jayson Byles (forager, trained chef and former commercial seaweed-harvest manager) has taken guests onto the shore at low tide to harvest seaweed and eat it cooked over fire on the beach. For the trade we run three bookable experiences: a four-hour hero day, a 90-minute coach-friendly taster and an indoor seaweed-and-whisky evening that runs year-round. Every session is led by Jayson personally from our base at the Bowhouse food hub in St Monans.

We work with tour operators, destination management companies, incoming agents and accommodation partners who want to offer their guests something genuinely of this coast: hands-on foraging and wild cooking with the guide National Geographic sent its readers to.

Fife’s visitor economy runs on golf, castles and pretty fishing harbours: wonderful, and everywhere. This is the day that isn’t on anyone else’s itinerary: guests walk out onto a shore that only exists at low tide, harvest it with their own hands, and eat it cooked over fire. It photographs beautifully, it works in most weather, and no one else in the region offers it.

In March 2025 Welcome to Fife brought trade partners along the coast on a FAM trip: East Neuk Seaweed was the shore stop. Two and a half minutes of what a day here looks like inside a wider Fife itinerary.

FAM visits welcome. The best way to sell a day on the shore is to have stood on it. Product managers, agents and guides are welcome to join a session and experience it first-hand, individually or as a team, by arrangement. Tides set our calendar, so send us a few possible dates and we’ll match them to the water.

Good to know

Practical answers for briefing sheets and tour-leader notes. Anything not covered here: one email, answered within 24 hours.

Are dogs allowed?No on workshops: foraging, fire and food don’t mix with dogs. Assistance dogs: ask us.
Do you feed the coach driver?Yes: drivers and tour leaders join and eat free of charge.
Is the tour leader free?Yes: one free leader place per group.
Are there toilets?Yes at the Bowhouse meeting base (from 8am); none on the shore itself.
Is it wheelchair accessible?No on the shore: uneven, slippery, tidal ground. The indoor Coastal Dram is accessible.
Pregnant guests or heart conditions?No on On the Rocks: four hours and ~800 m over slippery rock. The Taster suits most guests with care; anyone with a heart condition should check with their doctor first.
Can children take part?Yes: Taster all ages; On the Rocks 8+; under-16s with a participating adult. Children forage with supervised cutting.
Is guiding English-only?Yes: tour-leader interpretation is welcome and works well.
Does rain cancel a session?No: only unsafe conditions do. The call is ours, by 5pm the day before wherever possible.
If you cancel for safety, do we pay?No: free re-date, swap to the indoor Coastal Dram, or full refund. Your choice.
Can a 49-seat coach get there?Yes: drop, wait and turn at the Bowhouse; the Taster (max 40) is the coach product.
Can you invoice us?Yes: GBP invoicing for trade; FIT settles via FareHarbor.
Can we hold dates provisionally?Yes: 14-day options on exclusive bookings.
Dietary requirements & allergens?Yes: tell us at booking, 7 days’ notice minimum. Vegetarian, vegan and gluten-free are catered for, and shellfish can be left out entirely. Every menu is built on wild seaweed, so traces may be present in any dish.
Alcohol-free Coastal Dram?Yes: a full non-alcohol flight is available with 7 days’ notice.
Do two sessions run the same day?Yes: e.g. shore session on the tide, Coastal Dram in the evening.
If a guest is late?We hold 15 minutes: the tide can’t wait longer. Call and we’ll advise.
Is there a backup if Jayson is unavailable?Yes: priority re-date, Coastal Dram swap or full refund; a session is never quietly substituted.
Risk assessments & insurance certificate?Yes: issued to contracted partners as standard. Public liability £1m.
Do you run in winter?Yes: Coastal Dram year-round; shore sessions on selected winter tides.
Photography & filming?Yes: guests freely; commercial shoots and drones by arrangement.
Gift options?Yes: gift vouchers and the Thriving in the Intertidal e-book.
Do guests need their own kit?No: all safety equipment provided; guests bring sturdy footwear and weather-appropriate layers (kit list sent at booking).
