East Neuk Seaweed Summer 2021.png

Jayson delivers a very informative and enjoyable course and cooked a delicious meal on the beach using our gathered seaweed. Highly recommended and I now feel confident to give seaweed foraging try myself . “I'm writing this with a big smile. I loved the engaging, enthusiastic delivery expressing the wonders of seaweed and respect and care of the envionment and for the foragers. All my questions felt welcome, were answered and knowledge shared whetted my appetite to learn more. Resources for further information were supplied. Practical details from a wealth of experience were valuable. What I wanted was practical information and got it. I feel much better equiped to go forth happily with confidence, hard hat and holes in my old wellies and also to enjoy eating what I've gathered. I'm looking forward to the next East Neuk Seaweed School event. Thank you.”

H.E, Orkney

“Jayson has a wealth of knowledge about identifying and foraging for seaweed with extra facts about tides, safety and sustainability. He is happy to share his knowledge with everyone and is very generous with his offers of help -and seaweed.”

I A, Newburgh

“Jayson lives and breathes sustainable local foraging, he has an absolute passion and enthusiasm for sharing what he knows; and he knows seaweed inside out! I thoroughly recommend East Neuk Seaweed to anyone at all interested in the great natural larder that is our seashore.”

EC

“After a workshop with Jayson, I not only leave feeling more knowledgeable and confident about seaweed foraging and cooking, but also with a big smile on my face. He always shares the joy being on the coastline.”

A. L. Root (London, UK).

“I've led climbing and mountaineering groups and I've always foraged. With that in mind, what came across in the workshop was the considered and carefully constructed content and Jayson's knowledge, passion and experience, his care for the well-being of both his clients and the environment.”

LW Edinburgh

“We thoroughly enjoyed our “On the Rocks” introduction to gathering seaweed. Jayson explained all the safety aspects which included the importance of appropriate clothing and understanding tides. We found several different types of seaweed which we had a chance to taste and gather. Jayson took time to tell us about each type, how to cut it, and how it can be used. It was relaxed and fun, and we feel more confident in knowing how to safely collect and cook with seaweed without adversely affecting the environment.”

I Smith

“Very enjoyable morning on the rocks, learned such a lot about seaweed and its uses. Jayson was very helpful and knowledgeable. Good to harvest and sample seaweed as it brought the experience to life and made it more likely that I would retain the information! Would highly recommend.”

Jo, West Fife

“Jayson has incredible knowledge about the macroalgae growing in the East Neuk. It is also incredibly valuable that he is also a great cook who knows how to utilise the different types of seaweed in fun and innovative ways. I would highly recommend these workshops for individuals visiting the area and for locals who want to learn about this amazing food source.”

C.J. Canada

“Jayson’s seaweed workshop offers the opportunity to learn about and reconnect with nature in a highly therapeutic and entertaining way. Who knew seaweed straight off the rocks could taste so delicious? I enjoyed learning about all the different seaweed types, each varying greatly in flavour and texture, and hearing Jayson’s tips about how to prepare and incorporate them all into different meals. The two hours flew in, yet we learnt so much in the time. Whether you are local, or visiting the area, Jayson’s workshops are a great way to spend a morning learning about an intriguing subject so seldom explored. Kids, especially, will love the chance to scrabble about the rock pools and learn about Scottish wildlife in this very creative, hands-on way.”

CH Glasgow

“My daughter and I attended one of Jayson's workshops to celebrate her birthday in in what was a beautiful/natural environment. This unique and exciting gift was mailed out to her in the way of a special gift voucher. We had a great time! The workshop was extremely interesting, professionally delivered by Jayson in an informative but relaxed, informal way. The small group numbers allowed plenty 'question and answer' time. We learnt a great deal about all different types of seaweed and enjoyed nibbling on them. They range greatly in texture and flavour...fascinating! We learnt a lot about other aspects of the sea/sea life too! We can now use our new found knowledge of seaweed to increase our health and enhance our diet in a way that wont harm the environment. I would highly recommend this fun workshop to everyone.. adults and kids alike. Seaweed is simply AMAZING!!”

C Haigh, St Andrews

“Such a beautiful foraging experience. Many nuggets of wisdom and knowledge from Jayson. I'll be looking at seaweed in a completely different way from now on!”

Charlotte, Edinburgh

“We had a great day with Jayson learning about our local range of seaweed, how to identify, store and use them. He was very patient, fun and gave us plenty of time to discover and ask questions, very enjoyable and recommended, but mostly very useful knowledge for us and future generation!”

C. Metayer, Scotland

“We had a great day on the rocks, at the beach, learning a new aspect of our local environment. Since my family live on the coast we see seaweed and the shoreline almost every day and were unaware that there was so much to learn about, different types of edible stuff right there on our doorstep. On the course we received good, clear, well explained details on the make up of the sea shore which was fascinating in itself and could also lead into different ways of cooking and adding it to the meals we eat day to day. It was also a way to learn how to be environmentally careful about foraging and how to protect and promote sea life into the future.”

M. Fyfe, St Andrews

“Jason's workshop was enthralling. As you'd expect, learning about seaweed meant roaming around the shore, foraging for different species and learning to identify them. But what made it great was the flow of entertaining, eclectic seaweed-related information: tides and tempests, food and cooking, cultures and climate change - biology, geology, ecology, anthropology and history - all mingling seamlessly as we scrambled over rocks and nibbled little tasters from our samples. It made for a great morning and I left feeling I'd learned a lot - but well aware I'd just scratched the surface! Highly recommended.”

JM Fife

“We had a blast splashing through pools, nibbling sea spaghetti off rocks and collecting wrack for baths later. So replenishing for the soul to be immersed in wild nature like this - and Jayson is the ultimate guide to the inter-tidal zone. - 'On the rocks' is rock n' roll!”

S Irvine, Crail

“A fantastic morning on a beautiful coastline learning about seaweed and it’s uses from a very knowledgeable and enthusiastic guide, who knew seaweed could be used for so much?”

D Weir, Scotland

“An amazing introduction to seaweed! This was a real ‘hands on experience’’. Under the expert guidance of Jayson we went out at low tide, learned to identify and then carefully harvest different species. It was a morning I would highly recommend. If you’re a ‘foodie’ you have a treat in store when Jayson demonstrates his chef skills. Our ‘seaweed Harvest’ became a mouth watering meal. Sea bass wrapped in sea lettuce was Michelin 5* !”

C Walmsley

Sarah M, Fife

“An extremely enjoyable session! Lots of interesting information presented in a clear and friendly fashion with a cooking demonstration at the end that really boosts your confidence to try it yourself. It completely changed my view of the seashore.”
